Apple Chips

Apple chips are a yummy way to savor the harvest season.

Preparation Time: 10 minutes prep + 2 hours drying time

2 ripe apples (any type)
1 Tbsp. cinnamon
2 Tbsp. light brown sugar
1/4 tsp. ground allspice

special equipment: mandolin, parchment paper or Silpat

Preheat the oven to 225 degrees F. Line two baking sheets with Silpat liners or parchment paper. Using a mandolin on the thinnest possible setting, slice apples crosswise. Take each apple slice and dip both sides into the cinnamon-sugar mixture and lay on prepared baking sheets. Add as many slices to each baking sheet as possible without overlapping. Bake in the oven for 2 hours, flipping apple slices over and switching trays halfway through. Allow to cool on wire racks, and store in wax paper bags. Makes approximately 50 chips.
