Arugula And Chicken With Grapes

Fresh and easy.

Preparation Time: 30 MInutes


12 oz fresh arugula leaves
12 oz fresh spinach leaves
1 lb boneless chicken breast
1/2 lb pitted Sicilian olives
1/2 lb pitted or seedless red or white grapes
1/2 pint cherry tomatoes
1 cucumber sliced
olive oil
red wine vinegar
salt and black pepper to taste


Wash arugula and spinach leaves in cold tap water; place in bowl; toss in olives, grapes, tomatoes and cucumber.

Whisk together olive oil, red wine vinegar and oregano to taste to make dressing. Set aside.

Slice and saute or grill chicken.

Toss vegetables with dressing and place chicken pieces on top.

Serves 4-6

2-3 Gold Taper Candles, Crusty Bread in Straw Baskets, China Dinnerware, Silverware and Goblets for White Wine which shall be placed in Decanters.
