Buttery Bread and Fruit Pudding

Another tasty bread pudding recipe using fresh fruit.

Preparation Time: 10 mins to mix, 45-60 mins to bake


6 to 8 slices of bread, any kind
butter or margarine
1 quart fresh berries, peaches, or other soft fruit
1 to 1 1/2 cups sugar
pinch of cinnamon and/or mace


This is so easy, it's almost cheating!

Heat the oven to 350.

Butter a 9 x9 x 2 inch dish - or your favorite baking pan

Butter 3 or 4 of the slices of bread. Put them, face up in the pan.

Dump 1/2 of the fruit on top of the bread, sprinkle with 1/2 of the sugar.

Mash the whole thing with a potato masher

Repeat with the rest of the bread, fruit, sugar, and spices.

Bake for about 30 minutes, uncovered. Smash the fruit and bread some more, and bake for an additional 30 minutes - until all syrupy and good.

Remove from over, and let cool a bit. Serve with ice cream, or whipped cream, or whatever.

We had this for dinner tonight with blackberries that my neighbor grows. It was GREAT!
