Pork Teriyaki Stir Fry w/ Coconut Rice

Preparation Time:

Ingredients:

For the stir fry:
3 pork tenderloin cutlets, pounded thin
1/2 a small red onion, cut into thin strips or half-moons
1/2 red bell pepper, cut into thin strips
1 carrot, cut into matchsticks
3/4 cup broccoli, cut into small florets
1/2 can sliced water chestnuts, rinsed and drained
1/2 can bamboo shoots, rinsed and drained
2 Tbsp. unrefined coconut oil, separated (any high smoke point vegetable oil may be substituted, no olive oil)

For the teriyaki sauce:
1-2 tsp. Thai roasted red chili paste
1 Tbsp. hoisin sauce
1 Tbsp. tamari or soy sauce
1 Tbsp. local honey
1/2 tsp. Sriracha (rooster) sauce (or 1/2 tsp. any hot sauce and a dash of garlic powder)
1/2 tsp. grated fresh ginger
1 tsp. unflavored rice vinegar
1 tsp. freshly squeezed lemon juice
2 dashes toasted sesame oil

For the coconut rice:
2 cups jasmine rice
1 13 oz can coconut milk
1.5 cups pork stock (can substitute half chicken half beef)
1/2 small red onion, finely diced
salt and pepper to taste
1 Tbsp. unrefined coconut oil (or other high smoke point vegetable oil)


Directions:

First, cut the pork cutlets into 1/2" wide by 2" long strips and place into a bowl.
Make the teriyaki sauce by combining in a separate bowl all ingredients, and whisking until smooth. Taste, and adjust seasonings as necessary.
Pour about 1/4 cup of the sauce over the pork strips and mix until thoroughly coated with sauce. Set aside.
Start the rice: in a medium sauce pan heat the oil over medium-high heat. Add the diced onions and sautee until just golden, stirring often, about 5 minutes. Add the rice to the pot and toast for about a minute, before adding the coconut milk and the stock. Stir and cover the pot, and bring it to a boil. Reduce to a simmer and let it cook for 20 minutes.
In the meantime, start the stir fry. In a wok or large, deep fry pan add one Tbsp. oil over high heat. When the oil begins to shimmer, add the carrots and peppers and cook, stirring, for one minute. Add the onions, and cook, stirring 30 seconds. Add the remaining vegetables, and cook, stirring, for an additional one to two minutes. Push the vegetables off to the side of the pan and add the additional Tbsp. of oil. Add the pork, and stir fry, turning frequently, until the pork is no longer pink, about 3-5 minutes. Add the remaining teriyaki sauce to the pan and stir until everything is evenly coated in sauce. Turn off the heat.
When the rice is finished, let it stand covered for an additional 5 minutes, then uncover and fluff with a fork. Serve a portion of rice, with the pork stir fry over the top.

I made this dish for my first meal at a new apartment, the day after I cleansed and blessed the space in order to bring in energies of happiness and success to my new place. This was all made up with stuff I had on hand, with an eye towards bringing positive magickal energy in.
