Veggie Kabobs

Fire roasted veggies are delicious and super easy.

Preparation Time:


Ingredients for 4 Kabobs

1 summer squash, cut into large chunks
8 whole button or baby bella mushrooms
1 bell-pepper, any color you like, cut into large pieces
1 onion, cut into large chunks
8 chunks of baked tofu (completely optional)
8 grape tomatoes
Italian style dressing of your choice
4 skewers


Rinse and dry the vegetables then carefully thread the chunks of veggies and tofu onto a long skewer in the order they are listed.

Place each kabob in a large marinading container (or something similar) as you finish it. When you are done with all and pour the Italian dressing over them.

Put them in the fridge or the cooler to marinade for a few hours or overnight. Just give them a shake and a flip every once in awhile to make sure the marinade is getting all over everything.

When your fire is ready, place the kabobs on the grill and cook for five minutes and then turn. The veggie skins will char a bit, that's okay, that is the deliciousness showing. When you feel it's ready, it's ready!

Additional Comments:

Do not use a "fat free" or "creamy Italian" dressing. The oil in the italian dressing is very important for cooking.

Make your kabobs ahead of time and stick them in the cooler so that you don't have to fuss at the campground.
